Sprouted Moong Chaat
A fresh, tangy Indian snack of sprouted mung beans, cucumber, tomato, lime, and roasted cumin.
Ingredients
- 400 g mung bean sprouts
- 1 medium cucumber, diced
- 2 medium tomatoes, diced
- 0.5 medium red onion, finely chopped
- 3 tbsp cilantro, chopped
- 2 tbsp lemon or lime juiceSmart swaps

- 1 tsp chaat masala
- 1 whole green chilli, finely chopped
- salt to taste

Method

For food safety, steam or boil the mung sprouts for 5 minutes, then drain and cool. Keep them warm instead if serving as a warm chaat.

Combine sprouts, cucumber, tomatoes, onion, cilantro, and chilli in a bowl.

Add lemon juice, cumin powder, chaat masala, and salt. Toss well and taste for seasoning.

Serve promptly as a snack or light meal.
