Method

    Cut the fish into large pieces and season lightly with salt and turmeric.

    Heat oil in a wide pan. Add mustard seeds and curry leaves; when fragrant, add shallots, ginger, and garlic and cook until softened.

    Stir in chilli powder and tomatoes. Cook until the tomatoes soften, then add coconut milk, tamarind, and 120 ml water. Bring to a gentle simmer.

    Slide in the fish and simmer gently until opaque and just cooked through, about 7 to 10 minutes depending on thickness. Avoid vigorous stirring; taste and adjust salt.
